Broccoli Crust Breakfast Pizza

Ok, I know what you are thinking because the same thought crossed my mind when I saw this recipe on FIXATE. WTF?! 

But I couldn't knock if I hadn't even tried it...and guess what?! I TRIED IT AND I LIKED IT! (parents, you will get that reference) 

Liked it so much that as I type out this blog post, I am drooling over the thought of eating it again. Yes, yes it is that good. 

And even better, my beloved Trader Joe's sells PRE RICED BROCCOLI!!! I did not have to make a mess ricing my own.  Gah, I love time savers! 

 

What You Need -> 

For Crust:
Parchment Paper
Nonstick Cooking Spray
3 cups riced broccoli - find it pre-riced (Trader Joe's, Target, etc. otherwise you can rice your own, those steps are not in this recipe) 
1/2 cup shredded, part skim, low moisture mozzarella cheese
1/4 cup grated Parmesan cheese
2 large eggs, lightly beaten
1/2 tsp. sea salt
1 clove garlic, finely chopped
1/4 cup finely chopped fresh basil leaves

For Topping: 
1 Tbsp. extra-virgin olive oil
2 large eggs, lightly beaten
1/4 cup shredded, part skim, low moisture mozzarella cheese
1/4 cup sliced mushrooms
1/4 cup sliced red bell pepper

Preparation: 
1. Preheat oven to 400 degrees. 
2. Line large baking sheet w/ parchment paper. Lightly coat w/ cooking spray. Set aside. 

For crust (these are steps if broccoli is pre-riced):
1. To make crust, combine broccoli, mozzarella cheese, Parmesan cheese, eggs, salt, garlic, and basil in a medium mixing bowl; mix well. 
2. Transfer broccoli mixture to the center of prepared baking sheet. Shape into an approximately 10-12 in pizza crust by pressing down & out w/ fingertips. Make sure to create a raised lip around the edges to keep ingredients from sliding off. 
3. Bake for 17-20 minutes, or until crust is set & is slightly browned around the edges. 

For topping: 
1. Brust crust w/ oi. Top w/ eggs, cheese, mushrooms, & bell peppers.
2. Bake for 6 to 8 minutes, or until cheese is melted & eggs are starting to set. Switch to the broiler setting, broil for 2 minutes or until golden brown & eggs are done. 
3. Allow to cool for a few minutes before serving. Be careful when removing pizza from parchment because it can stick! You can work around the crust w/ a spatula to release it from the paper before transferring to a cutting board. 
4. Cut into 6 slices. Enjoy!! 

Serves 3, 2 slices each.
