1 serving = 3/4 cup (makes about 6 servings)
2 lb Chicken Breast
2 tbsp of Southwest Seasoning (see below)
1 can of diced tomatoes w/ peppers, not drained (rotel)
1 can of black beans (drained and rinsed)
1/4 cup water
Instructions:
1. Place black beans & diced tomatoes in crockpot.
2. Season chicken with southwest seasoning.
3. Place chicken on top of bean & tomato mixture.
4. Cook on low 6-8 hours. (Or high 3-4 hours)
5. For the last 1/2 hour, I shred my chicken & let it continue to cook.
I put my chicken mixture on top of a salad tonight. It was perfect!
1 cup romaine lettuce
1 cup shredded cabbage
2 tbsp salsa ranch
2 tbsp avocado
You can really do so much with this chicken! Wraps, tacos, salads, rice bowls, etc. Typically I would do these as a taco, that I bake myself with corn tortillas, but I opted for a salad tonight!
Southwest Seasoning
2 tbsp chili powder
4 tsp ground cumin
2 tsp coriander
1 tsp onion powder
1 tsp garlic powder
1 tsp dried oregano
1 tsp paprika
2 tsp sea salt
Mix all the seasonings together and put in a sealed container, it should make enough to have some left for other recipes! It is really great on anything, I use it in my burgers too!
