I remember when I lived in Texas, we loved going to Jason's Deli for loaded potatoes or when I was in college, I would frequent McAlister's for a loaded potato (and lots of sweet tea) but now I am older and those calories go straight to my ass so I have to find way to enjoy those types of meals but slimmed down a bit!
If you like loaded potatoes, I also have a Fajita Potato under recipes that is delicious!
Note: I made 2 lbs of Southwest Chicken Tenders on Sunday as part of my meal prep so they were already cooked and waiting for me in the fridge! The Southwest seasoning is listed below. They are great in salads, wraps, tacos, etc.
LOADED SOUTHWEST CHICKEN POTATO
(1 serving)
What you need:
3/4 Cup Southwest Chicken
1 Baked Potato (halved)
Trader Jose's Pico (yes, you read that right, Jose)
Reduced Fat Shredded Cheese
Avocado Slices
Southwest Seasoning:
2 TBSP chili powder
4 tsp ground cumin
2 tsp coriander
1 tsp onion powder
1 tsp garlic powder
1 tsp dried oregno
1 tsp paprika
2 tsp sea salt
1. Microwave your potato until done. Slice it in 1/2, be careful, it's HOT! (hot potato, hot potato #momproblems) Don't forget to pierce with a fork before microwaving, they usually take about 6 minutes but depending on size, cooking times vary.
2. Heat up your chicken.
3. As your chicken heats up, place 1/4 cup pico on the potato.
4. Place chicken on top of pico, then add 2 tbsp shredded cheese and 2 tbsp avocado. Top with another 1/8-1/4 cup pico.
5. Drizzle with about 1 tsp of Salsa Yogurt dressing
6. ENJOY!
